Sweet Crunchy Oatmeal

This one is so good, my 2 year old asks for thirds and fourths! If you've ever had a toddler around, you know this is truly a rarity! Usually (if it is healthy food) it's one bite and then throwing! I had to double the recipe just to have enough for him at breakfast-time. As a parent, it is such a relief to see him eat well and be food you can get behind!


The fun part of this recipe is you get to brulee the oatmeal. I never thought to use the broiler to do this. I always thought I couldn't make a yummy sugar-crust without a kitchen torch.


Ingredients:

1 Cup Steel-Cut Oats

2 Cups Unflavored Plant Milk (We use Almond Milk)

1 doTerra Cinnamon toothpick **

1 teaspoon Vanilla

2 handfuls of raisins

3 Tablespoons Turbinado Sugar


Prepare:


1. In a Saucepan, cook Oats in the plant milk. Add in the vanilla, raisins, and swirl the Cinnamon toothpick in the mixture and discard the toothpick.


2. Once the oatmeal is fully cooked, pour the mixture into a broiler-safe, 8 x 8 cake pan, or a bread pan. Sprinkle the Turbinado sugar across the top.


3. Broil until the sugar is melted and golden brown. Watch closely because the sugar can go from toasted to burnt in the blink of an eye.
